@chef_manav_tuli took us around India through a series of lamb curries. From more known kormas and Rogan Josh (obviously much more regional and much higher standards) to Champaran, Salli boti, Kosha and Laal Maas, I am so grateful that chef can share with us originals so we can access and understand more the fundamentals, history and fun family stories. Delicious delicious delicious. So lucky to have a gem like him at @chaathongkong and him allowing us to try the originals. Let’s try to not make him adjust to the “hk palette” and so we can appreciate true Indian flavours allowing him to stay true to his roots.
I always ask the chef to do it the way they would eat it 😉 Next time no need to remove that layer of oil on top of the rogan josh 🤣 I will also wear my spicy hat.
